Slow Sauce is a fermentation project rooted in tradition and adapted to place. They make small-batch miso and shoyu using Scottish-grown gluten-free oats and British peas, aged in oak barrels in the hills of Aberdeenshire.
Founded by fermentation obsessives Robin Sherriff and Jonathan Hope, Slow Sauce is part kitchen experiment, part agricultural rethink. They take the classic Japanese method of koji fermentation and reimagine it with ingredients grown here, creating something new while remaining deeply respectful of where it came from.
It’s miso, but not as you know it — sweet, savoury and punchy. Slather it on toast, stir it through porridge, sip it hot in the morning, dress your salad or glaze your veg.

The Scotch Whisky Association is the trade association for the Scotch Whisky industry. The mission of the SWA is to secure a sustainable future for the Scotch Whisky industry. Its main objectives are for Scotch Whisky to be produced sustainably, traded globally and enjoyed responsibly. The SWA represents over 90 companies from across the Scotch Whisky industry, from global spirits producers to family-owned firms, established to new distillers, that accounts for the majority of Scotch Whisky production.

Join Ruth Munro, founder of The Edinburgh Fermentarium, for a hands-on workshop creating Nukazuke - Japanese fermented pickles - and learn how to confidently make them at home. It’s a brilliant way to make use of leftover vegetables!
This traditional technique uses a Nukadoko, a fermented rice or oat bran bed, and has been used in Japan for centuries. The result is a tangy, flavour-packed treat that not only adds a delicious punch to your meals, but is also rich in nutrients and beneficial bacteria.
Ruth will introduce you to Nukazuke, a fermentation process she first discovered during a trip to Japan last year. The technique can completely transform vegetables in as little as 24 hours, turning them into tangy, probiotic-packed pickles.
Nukadoko are often passed down through generations, with some traditional manufacturers maintaining and using their beds for over 300 years. During the 40 minute workshop, you’ll have the opportunity to make your own Nukadoko and learn how to confidently continue making Nukazuke at home.
